Bird Camp Schnitzel

Ingredients

  •   Any wild bird breasts
  • 1/4 c Flour
  • 1 Egg (beaten)
  • 1/4 c Plain Bread Crumbs or Panko
  • 1/4 c Vegetable Oil
  • 1 pat of Butter
  • Lemon Juice to taste


Directions

  1. Take the bird breasts and put between 2 sheets of plastic wrap - a gallon size storage zip bag woks great.   Flatten breasts to approximately 1/4” with the flat side meat mallet.
  2. Dredge breasts, both sides in flour, then dip into egg, then pat down both sides in breadcrumbs. Set aside.  
  3. In a fry pan, heat up 1/4 cup of vegetable oil. Place a small pat of butter in center of oil. When butter melts and starts to dissipate, place breasts in pan and fry approximately 1-2 min both sides.
  4. When done place on paper towel and squeeze lemon juice over one side of the cooked breast.
     
  5. When done  Serve with your choice of potatoes and veggies.
